Student Engagement with the Local and the Global Food System

The TLTC Quick Wins funds will support a pair of courses to address problems and solutions of local and global food systems. The two experiential courses will facilitate student involvement with community organizations both locally and in Cuba. One course will provide the foundations of sustainable food systems in classroom activities, complemented by four all-day field trips that will illustrate different facets of the food system from production to consumption. The other course will be primarily based on field exercises and tours and will provide opportunities for students to be engaged in the local food system in southern Michigan, and also experience the food system of Cuba, where the food system has undergone a dramatic transformation toward sustainability.  Quick Wins funds will support the coordination and expenses of field trips as well as evaluation of learning outcomes from these experiential courses.
